Masala Cheesy Chips

Masala Chips are a hot favourite anywhere in Kenya, esp Nairobi. Don't miss the out when u go out there. The cheesy bit is my variation as we are lovers of cheese :)..

Ingredients:

Potatoes – 5 pcs, peel, wash and cut in strips                       tomatoes – 1 pc, finely chopped

Onion – 2 pc, finely chopped                                                       Garlic and ginger paste – 1 ½ tbsp

Paprika – 1 ½ tbsp                                                                          Butter – 2 tbsp

Ketchup – 2 tbsp                              Salt – as per taste

Chilli Sauce – 2tbsp                                                                        Black Pepper – ½ tsp

Corriander – 3 tbsp                                                                        Cheese - 2 cups, grated (cheddar/mozzarella)

Oregano herbs – 1 tsp

Schezuan Chips

Got a knack for Chinese food? My hubby is totally into Chinese food and so I have to keep up my toes for that flavor! I cant compare how I make Schezuan Chips with the ones served at Chowpaty in Nairobi (diamond plaza) but I have tried too alittle..! Chowpaty's Schezuan Chips are delicious, finger licking to say the least. If u ever do go to Kenya, then these Chinese flavored chips are a must must try.

Ingredients:

Potatoes – 7 pcs, peel, wash and cut in strips                       Capsicum – 2 pcs, cut in thick strips

Onion – 2 pcs, diced                                                                       Butter – 2 tbsp

Schezuan Sauce  - 4 tbsp                                                               Paprika – 1 tbsp

Corriander – 2 tbsp                                                                        Black pepper – ½ tsp

Salt – as per taste                                                                             a dash of lemon

Spring onion greens – 2 tbsp

Method:

* Heat oil in a pan. Deep fry cut potato strips in oil till golden brown. Keep aside.

* Melt butter in another pan on low heat. Add onions and fry till edges of onions brown. Add capsicum. Fry for 2 mins. (don’t let capsicums die).

* Add Schezuan sauce and stir for 2 mins. (Let the sauce get a little dry. You don't want soggy chips.) Add fried chips, salt, pepper, paprika and mix well till all ingredients are mixed well with sauce. Turn off gas.

* Remove in serving plate. Garnish with coriander and spring onion greens. Squeeze a dash of lemon. Serve hot.

Butter Chips / French Fries

Nothing better than to have a bowl full of butter French fries waiting for you to indulge in on a summer afternoon. Or maybe surprise the kids on their way home...they just love these:)

Ingredients:

Potatoes – 8 pcs, peel, wash and cut in strips            Butter -3tbsp                                                                     

Paprika – 2 tbsp                                                                               Black Pepper – ½ tsp                                    

Salt – As per taste                                                            A dash of lemon

Oil – 1/3 pan full

Method:

* Heat oil in a pan. Deep fry cut potato strips in oil till golden brown. Keep aside.

* Melt butter in another pan on low heat.

*Add fried potato strips. Sprinkle salt, black pepper and paprika. Toss well till all incorporated with butter.

* Remove in a serving plate and squeeze a dash of lemon. Serve.

Note: Drying chips thoroughly makes them more crispier than from water to oil pan.
          : Add more paprika if you like your food on the fiery side :)..but be sure to keep a glass of fruit juice handy...u just never know :)

Spicy Garlic Chips / French Fries With Mayo

A must make when you have guests around. Easy, quick and delicious. Your guests will be craving for more so better have them prepared :)

Ingredients:

Potatoes – 5 pcs, peel, wash and cut in strips       Garlic – 8 cloves, crushed

Butter – 2 tbsp                                                                  Paprika – 1 tbsp

Black Pepper – ½ tsp                                                     Mayonnaise – 2 tbsp (or as per your liking)

Coriander – 2 tbsp                                                          Salt – As per taste                                                           

A dash of lemon

Method:

* Heat oil in a pan. Deep fry cut potato strips in oil till golden brown. Keep aside.

* Melt butter in another pan on low heat.

* Add crushed garlic till golden (do not burn). Add fried potato strips. Sprinkle salt, black pepper, paprika and coriander. Toss well till all incorporated with butter and garlic.

* Remove in a serving plate and squeeze a dash of lemon. Drizzle mayonnaise in a spiral motion over garlic chips.  Serve.

Note: Drying chips thoroughly makes them more crispier than from water to oil pan.

Spicy Garlic Chips - The Kenyan Way!!

These are the best garlic fries and everyone in my family goes gaga over them...A must try for all those who love garlic and potatoes....! I don't really have pictures to post but the next time I make them will surely post them up....

Ingredients:

Potatoes – 5 pcs, peel, wash and cut in strips       Garlic – 8 cloves, crushed

Butter – 2 tbsp                                                                  Paprika – 1 tbsp

Black Pepper – ½ tsp                                                     Corriander – 2 tbsp

* Heat oil in a pan. Dry potato strips thoroughly with a towel. Deep fry cut potato strips in oil till golden brown. Keep aside.

* Melt butter in another pan on low heat.

* Add crushed garlic till golden (do not burn). Add fried potato strips. Sprinkle salt, black pepper, paprika and coriander. Toss well till all incorporated with butter and garlic.

* Remove in a serving plate and squeeze a dash of lemon. Serve.
